We try to keep breakfast healthy for Lucy. She is still obsessed with green drinks and drinks one every day. In fact, just yesterday, I served her green smoothie at lunch instead of breakfast and she drank four little cups before she ate any of her grilled cheese. Who does that? Feel free to remind me of that in three years when all she will eat are gummy bears and oreos (I know good things don't last forever!).
This morning, I decided to try something new and made us both Chia Seed pudding for breakfast and we are obsessed. It was so yummy and so easy to make! I didn't soak the seeds for quite long enough, so next time, I'm going to plan ahead and soak them over night. The whole thing took about 5 minutes to puree and plate, so it is a GREAT breakfast for a busy mom to make!

I sort of winged our breakfast after doing a little research. I adapted two recipes that were similar and then added my own flare. The source recipes are found in Clean Eating and on the Live Simply Natural blog. The main ingredients in this chia pudding are cashews, dates (soaked overnight) and chia with vanilla and cinnamon added for some extra yum factor. I am no cook book author nor am I a nutritionist, and I also tend to make things up as I go along.
