Quick and Easy Pesto for Toddlers

I made a mistake while making Lucy lunch today. I prepared her chickpea noodles. We love those things, have you tried them yet? They are AMAZING! But, as the noodles were dancing away in the boiling water, I realized there was no sauce and no butter. 

A quick interent search led me to a recipe for DRIED basil pesto. I didn't have a choice, so I figured, why not? 

The recipe called for equal parts dried basil, toasted pine nuts, parmasian cheese, and olive oil. Ingredients, I do happen to have in my pantry. I mixed the ingredients in the food processor as directed but once finished, I thought it tasted a little bitter so I added some raw honey (lucy is over 1, so honey is A-OK) and voila, it was yummy! Full disclosure, I cannot WAIT to make her real pesto for her, but this worked out great in a pinch! 

Guess what? She LOVED it!
