At home with the kids this week (and for the foreseeable future)? Have your kids help you prepare meals! Cooking is a great activity that teaches so many skills, most of all, math, without being overwhelmingly "mathy."
One of our favorite things to make together is spinach muffins. We have tried SO many recipes and most are either loaded with sugar or, are, quite frankly, terrible. Our favorite by far, are sweetened only with banana and honey, and Lucy likes making them as much as eating them. Lucy loves vegetables, but if your child doesn't, this is a great way to get spinach into their diet without having to push!
Seriously? How good do they look? The color is 100% from the spinach and Lucy likes to call them "turtle muffins."

We follow the recipe for sweet spinach muffins from super healthy kids
We tweak the recipe a little bit by using gluten free flour (I combine all purpose gluten free flour with almond flour) and we use half the reccomended honey. Even with half the honey, they are still sweet and very yummy!





Lucy can hardly wait for them as they cook and definitely has a hard time waiting while they cool. Can you blame her? They look fun and taste delicious!!
