Our whole family loves Lara Bars and we go through the big boxes quickly because they are convenient, yummy, and most only contain 2-5 ingredients so they are a win, win, win for us. They are absolutely perfect any day of the week, but especially on days when we are traveling or hiking. Lucy can easily eat two bars in one sitting and asks for them quite frequently. Since the ingredient lists are so short and comprised of only fruit and nuts, I wondered how easy they would be to recreate. It turns out, there are some REALLY good recipes on the internet. When we eat them at home, I don't form them into bars, it's much more fun for Lucy if I use cookie cutters and make shapes. Our most recent attempt is cashew cookie and there are only two ingredients, cashews and dates. The whole thing takes about 5 minutes to whip together and they are so yummy!
I followed the recipe available here and it's the best we've tried. And believe me, I've tried them all so you don't have too! This is the first one that made me want to blog about it! The cashew cookie is simply yummy and I can't wait to try a few more on her list.
